Ingredients

4 Tbsp. butter
2 Tbsp. flour
3 Tbsp. sugar
3 Tbsp. vinegar
2 tsp. salt
1/2 to 1/3 c. beet juice
1 1/2 c. beets
Preparation

Melt butter in top of double boiler.
Add dry ingredients; stir until smooth.
Add liquids slowly; cook until thick and smooth. Add cooked beets; let set over low heat for at least 10 to 15 minutes.
