Fresh Lemon Meringue Pie - cooking recipe
Ingredients

1 1/2 c. sugar
1/4 c. plus 2 Tbsp. cornstarch
1/4 tsp. salt
1/2 c. cold water
1/2 c. freshly squeezed lemon juice
3 egg yolks, well beaten
2 Tbsp. butter or margarine
1 1/2 c. boiling water
1 tsp. grated peel
food coloring (if desired)
1 (9-inch) baked pie shell
Preparation

Mix sugar, cornstarch and salt.
Use wire whisk.
Blend in cold water, then lemon juice until smooth.
Add beaten egg yolks. Blend thoroughly.
Add butter and boiling water, stirring constantly.
Bring to a boil until thickened.
Pour into pie crust.
Add meringue.
Bake at 400\u00b0 for 10 minutes.
