Ingredients

3/4 c. shortening
2 c. sugar
1/2 tsp. vanilla
1/2 tsp. coconut extract
3 c. sifted cake flour
3 tsp. baking powder
3/4 tsp. salt
1/2 c. milk
1/2 c. water
6 stiffly beaten egg whites
1/2 c. sugar
1 Tbsp. flour
1 c. milk
1 Tbsp. butter
1/2 tsp. coconut extract
1 small can coconut
Preparation

Stir shortening to soften.
Gradually add 2 cups sugar and cream together until light and fluffy.
Add extract.
Sift 3 cups flour, baking powder and salt together 3 times; add to creamed mixture alternately with milk and water, a small amount each time. Beat after each addition until smooth.
Fold in egg whites.
Bake in 2 paper-lined 9 x 9 x 1 3/4-inch pans in moderate oven at 350\u00b0 for about 30 minutes.
Put layers together with the following filling.
