Scalloped Eggplant - cooking recipe

Ingredients
    1 large eggplant
    1 Tbsp. cooking oil
    1 bell pepper, chopped
    1 small onion, chopped
    2 c. canned or chopped raw tomatoes
    1 tsp. salt
    1/4 tsp. black pepper
    1 Tbsp. oleo
    1 c. bread crumbs
Preparation
    Peel eggplant and dice in small cubes.
    Saute pepper and onion until tender.
    Add tomatoes, eggplant, salt and pepper; cook 15 minutes.
    Place in a casserole dish.
    Melt oleo in a skillet. Add bread crumbs and stir.
    Sprinkle bread crumbs over eggplant. Bake in a 350\u00b0 oven for 15 minutes, or until eggplant is tender and crumbs are brown.
