Sweet Potato Sombreros - cooking recipe

Ingredients
    2 or 3 cooked sweet potatoes or 1 can sweet potatoes (1 lb. 2 oz.)
    1 egg
    2 Tbsp. margarine
    1/2 tsp. salt
    1/4 to 1/2 c. brown sugar
    10 slices canned pineapple (rings)
    dash of nutmeg
Preparation
    Mash drained sweet potatoes.
    Mix with beaten egg, margarine, salt, brown sugar and nutmeg.
    Arrange slices of pineapple in a lightly greased shallow baking pan.
    Mound the sweet potato mixture on each slice.
    Brush with additional margarine, if desired.
    Bake at 425\u00b0 for about 15 minutes.
