Cauliflower Onion Soup - cooking recipe

Ingredients
    1 c. chopped onion
    2 Tbsp. butter
    2 Tbsp. flour
    2 1/2 c. chicken broth
    2 c. cauliflower
    3/4 c. milk
    1/2 c. heavy cream
    white pepper
    cayenne pepper
    salt
    minced parsley
Preparation
    In large saucepan, saute onion in butter until soft.
    Stir in flour; cook over low heat, stirring, for 3 minutes.
    Remove pan from heat; add chicken broth, stirring, and add cauliflower and bring to boil.
    Simmer for 30 minutes.
    Puree in blender in 2 batches and return to saucepan.
    Add milk, cream, cayenne pepper, white pepper and salt to taste.
    Cook until hot and serve sprinkled with minced parsley.
    Serves four.
