Sweet Pickled Beets - cooking recipe

Ingredients
    1 (10 qt.) bucket beets (1-inch tops and roots left on to cook)
    6 c. vinegar
    3 c. sugar
    3 Tbsp. mixed pickling spices, tied in a cloth bag
Preparation
    Boil the beets until tender, about 2 hours.
    Remove them from heat and peel.
    Slice 1/4-inch slices.
    Put the vinegar, sugar and spice bag in a kettle and boil for a few minutes or until sugar is well dissolved.
    Add the beets to the syrup and bring it back to the boiling point.
    Remove from heat.
    Pack while hot in sterilized jars and seal.
    Makes about 8 or 9 pints.
