Eggplant With Two Cheeses - cooking recipe
Ingredients

1/4 c. olive or vegetable oil
1/4 tsp. garlic salt
1 (15 oz.) can tomato sauce
1/3 c. Parmesan cheese
1/2 tsp. oregano
2 c. shredded Mozzarella cheese
1/3 c. flour
1 medium eggplant, peeled and cut in 1/2-inch slices
Preparation

Mix flour and garlic salt.
Coat eggplant.
Cook in oil over medium heat, turning once, until golden brown.
Pour 1/2 of tomato sauce into ungreased oblong 13 1/2 x 9 x 2-inch baking dish.
Add eggplant.
Sprinkle with Parmesan cheese.
Add remaining tomato sauce.
Sprinkle with oregano and Mozzarella cheese.
Cook, uncovered, in 325\u00b0 oven until hot and bubbly, about 25 minutes.
