Zucchini Relish - cooking recipe

Ingredients
    10 c. zucchini, ground
    4 c. onions, ground
    5 Tbsp. salt
    2 1/2 c. vinegar
    1 tsp. dry mustard
    1 tsp. turmeric
    1 tsp. cornstarch
    2 tsp. celery seed
    1/2 tsp. pepper
    6 c. sugar
Preparation
    Do not peel zucchini.
    Scrape out seeds.
    Grind zucchini and onions; add salt and leave overnight.
    Refrigerate.
    Rinse and drain.
    Add vinegar, dry mustard, turmeric, cornstarch, celery seed, pepper and sugar.
    Mix ingredients well.
    Cook until clear, about 30 minutes, over medium heat, stirring to keep from sticking.
    Put in jars and seal.
    Makes about 6 pints.
