Rice Cheesecake - cooking recipe

Ingredients
    1 c. cashews
    1 c. water
    1 c. hot cooked brown rice
    1 c. diced dried pineapple
    1 Tbsp. water
    1 pkg. unflavored gelatin
    1 c. water
    1 (9-inch) graham cracker pie crust or 1 pkg. graham cracker crumbs on bottom of pie plate
Preparation
    Place cashews and 1 cup water in blender; blend well, then add rice.
    Soften pineapple and 1 tablespoon water in microwave, then add to blender.
    Add remaining 1 cup water and blend all well. Pour mixture into crust slowly and refrigerate.
    May top with fruit or chocolate.
