Bisque Of Shrimp Anglaise - cooking recipe

Ingredients
    3 Tbsp. butter
    2 lb. shrimp
    1/4 c. diced carrots
    2 Tbsp. chopped onion
    2 sprigs parsley
    bay leaf (small piece)
    1/8 tsp. thyme
    2 Tbsp. flour
    1 qt. chicken stock or soup
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. rice
    1/2 c. cream
    1/2 c. white cooking wine (optional)
Preparation
    Heat butter; add cleaned shrimp (shelled), carrots, onion, parsley, bay leaf and thyme.
    Cover and simmer 10 minutes or until shrimp are pink.
    Add flour; stir until blended.
    Add 1 cup stock, salt and pepper.
    Cover and simmer gently 10 minutes.
    Press through sieve.
