Ingredients

4 qt. skinned beets
3 c. cider vinegar
2 c. water
2 1/2 c. sugar
2 tsp. allspice
1 (3-inch) stick cinnamon
1/2 tsp. whole cloves
1 tsp. salt
Preparation

Combine all ingredients, except beets and bring to boil. Simmer 15 minutes.
Add beets and simmer 5 minutes.
Pack into warm jars.
Pour syrup over beets.
Put hot lids on and seal.
