Pork Chops With Apricot Sauce - cooking recipe

Ingredients
    8 dried apricot halves
    1 c. chicken stock
    1 Tbsp. oil
    4 (1-inch) thick pork chops, about 2 lb.
    salt and pepper
    2 tsp. Dijon mustard
Preparation
    Cut the apricot halves into thin strips and combine with the stock.
    Set aside.
    In a large frying pan, heat oil over medium heat.
    Sprinkle chops with salt and pepper and saute until browned, 6 to 8 minutes per side.
    Remove chops from pan and cover to keep warm.
    Add stock and apricots to pan.
    Bring to boil, scraping up browned bits, and boil until stock is reduced to about 1/2 cup.
    Remove from heat.
    Add the mustard and stir until smooth.
    Pour the sauce over the pork chops to serve.
