Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
1/2 tsp. nutmeg
3/4 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ginger
Preparation

Beat eggs at high speed for 5 minutes.
Gradually add sugar. Stir in pumpkin and lemon juice.
Sift all remaining ingredients and stir into the pumpkin mixture.
Blend well and spread on a greased and floured 15 x 10 x 1-inch pan. Top with chopped pecans. Bake at 350\u00b0 for 15 minutes.
Don't overcook.
Turn out onto towel that has been heavily sprinkled with powdered sugar.
Roll as for jelly roll.
Let cool thoroughly.
