Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 egg, beaten
    seasoning salt to taste
    grated Monterey Jack cheese
    chopped onions
    chopped peppers
    any other veggie you want (we like zucchini and frozen English peas)
Preparation
    Peel and cook eggplant.
    Mash slightly.
    Saute onions, peppers and anything else that needs sauteing.
    Mix with eggplant.
    Add egg and seasoning salt.
    Top with grated cheese.
    Cook about 4 to 8 minutes in the microwave.
