Ingredients

2 c. sugar
2 Tbsp. corn syrup
1/2 c. water
2 egg whites
3 egg yolks
2 Tbsp. butter
Preparation

Cook
syrup,
sugar and water to 242\u00b0.\tWhip egg whites very stiff.
In\tanother
bowl beat egg yolks stiff.
Combine the 2 and whip in syrup in thin stream.
When stiff and ready to spread add butter. Keep vessel covered for first cooking of sugar to prevent crystallization on sides of pan.
