Eggplant Parmesan - cooking recipe
Ingredients

2 medium eggplant, halved and thinly sliced
3 eggs
1/4 c. water
1/3 c. all-purpose flour
2 c. dry bread crumbs
cooking oil
8 oz. grated Mozzarella cheese
1/2 c. grated Parmesan cheese
1 large can mushroom spaghetti sauce (I use Hunt's)
Preparation

In medium bowl, beat together eggs and water.
Coat eggplant slices in flour, then dip in egg mixture.
Coat with bread crumbs. Heat oil in large skillet and fry eggplant slices until lightly browned, turning once.
Drain on paper towels.
