Fiesta Tamale Casserole - cooking recipe
Ingredients

1/2 lb. pork sausage
1 c. minced onion
3/4 c. diced green pepper
1 lb. ground beef
1 can Mexicorn
1/3 c. sliced olives
1 tsp. liquid from corn and olives
1 1/2 c. tomato sauce
2 (15 oz.) cans tamales
1 c. grated cheese
Preparation

In a large skillet, brown pork sausage.
Remove to paper towel.
Leave 3 tablespoons drippings in skillet.
Add onion and green pepper.
Saute until tender.
Stir in ground beef.
Cook until browned.
Add sausage, corn and olives, liquid from corn and olives and tomato sauce.
Mix well.
Simmer gently for 15 minutes. Open tamales; drain liquid.
Save 1/3 cup.
Add to meat.
Remove parchment wrapping from tamales.
Spoon meat mixture in large shallow casserole dish.
Arrange tamales on top.
Bake, uncovered, at 350\u00b0 for 15 minutes.
Sprinkle with cheese.
Return to oven about 20 minutes.
Serves 6.
