Seafood Gumbo - cooking recipe

Ingredients
    2 lb. peeled shrimp
    1/2 lb. filet of catfish
    1/2 pt. shelled oysters
    1/2 c. flour
    1 c. celery
    2 c. chopped onions
    4 cloves chopped garlic
    1 gal. water
    1/2 c. oil
    1/2 tsp. parsley
Preparation
    Make roux with flour and oil.
    Add onions and chopped celery to roux.
    Cook until onions are wilted; add water and garlic. Cook in heavy pot for 1 hour.
    Season to taste with salt, black and red peppers.
    Add shrimp, parsley and fish.
    Cook another 10 minutes.
    Add oysters; let come to boil.
    Serve in soup plate with cooked rice.
    Serves 6.
