Chicken And Dumplings - cooking recipe

Ingredients
    1 small chicken
    1 1/2 c. water
    1/4 tsp. salt
    1/2 stalk celery
    1/4 c. onion
Preparation
    Cut up and remove skin from chicken.
    Place in a large pan. Add water, salt, celery and onion.
    Simmer for 2 hours or until meat is tender.
    Remove chicken meat from the bone.
    Return chicken to stock.
    Bring chicken and stock to a boil.
    Add dumplings.
    Cover and boil gently 8 to 10 minutes (remove celery and onions from stock).
    This is a diabetic recipe.
    It is very good.
