Shrimp And Rice Salad - cooking recipe

Ingredients
    4 c. cooked rice
    1 c. cooked peas
    1 1/2 c. small shrimp, cooked or canned
    2 Tbsp. parsley, minced
    1/2 c. olive oil
    3 Tbsp. lemon juice
    salt and pepper to taste
    1/2 c. raw mushrooms, sliced
    1 Tbsp. tarragon leaves
    lettuce leaves
Preparation
    Mix all ingredients, except lettuce, thoroughly.
    Arrange nests of lettuce on 6 plates and fill with mixture.
