Colcannon(Irish) - cooking recipe

Ingredients
    6 potatoes
    6 scallions
    1 c. milk
    3 Tbsp. butter
    1 tsp. salt
    1/4 tsp. pepper
    2 c. cooked cabbage
    12 Irish bacon rashers
Preparation
    Chop 6 scallions very fine.
    Soak in cup milk with 1 teaspoon of salt for 1/2 hour.
    Put in a saucepan and simmer for 1/2 hour. Boil 6 medium potatoes, peeled in salt water.
    Cover until tender. Drain, dry and begin to mash.
    When smooth, beat in the scallions and milk.
    Add 3 tablespoons butter and continue beating over low heat.
