"Our" Mayonnaise - cooking recipe

Ingredients
    1 1/2 c. low-fat cottage cheese, drained
    1 Tbsp. apple juice
    2 Tbsp. apple cider vinegar
    1 egg white
    2 Tbsp. lemon juice
    1 tsp. Dijon mustard
    3/4 tsp. onion powder
    1 tsp. low-sodium soy sauce
Preparation
    Place all ingredients in a food processor fitted with the metal blade.
    Process 4 to 5 minutes until double in volume and very smooth and creamy.
    Pour into a glass container.
    Cover and refrigerate overnight.
    Makes 2 1/2 cups.
