Hoppin John Soup - cooking recipe

Ingredients
    1 lb. sausage
    3 cans black-eyed peas
    1 medium onion, diced
    1 c. Minute rice, cooked
    1 1/2 c. water
    salt and pepper to taste
Preparation
    Fry sausage and drain. Add peas and juice, onion, salt, pepper, water and sausage.
    Bring to a boil and cook on medium heat 30 to 45 minutes.
    Add cooked rice and let simmer 10 minutes.
