Ripe Tomato Relish - cooking recipe

Ingredients
    6 to 7 lb. ripe tomatoes, skinned and chopped fine
    6 c. onions, chopped fine
    2 green peppers, chopped fine
    1/4 c. salt
    5 c. sugar
    2 c. vinegar
    2 oz. mustard seed
    1/2 tsp. red pepper
Preparation
    Put tomatoes, onions and peppers in a pan.
    Pour salt over them and let set overnight.
    Next day put in hot sterilized jars. Mix sugar, vinegar, mustard seed and red pepper.
    Bring to a boil and simmer for 30 minutes to an hour until it thickens.
    Pour over vegetables in jars and seal with lids.
    Makes 6 pints.
