Polynesian Pork - cooking recipe

Ingredients
    6 pork chops
    1 (4 3/4 oz.) jar strained plum baby food
    1/4 c. flaked coconut
    2 Tbsp. water
    1 Tbsp. vinegar
    1 Tbsp. cooking oil
    2 tsp. soy sauce
    1/2 tsp. salt
    1/2 tsp. ground ginger
    1/2 tsp. grated lemon peel
    pepper to taste
    1 Tbsp. cooking oil
Preparation
    Trim any excess fat
    from chops.
    Brown in 1 tablespoon cooking oil, season meat
    with
    salt to taste.
    Combine plums, coconut, water, vinegar, soy sauce, 1/2 teaspoon salt, ginger, lemon peel and pepper, pour
    over
    chops.
    Cover and simmer 35 to 40 minutes or until meat is tender.
    Remove to warm platter with sauce spooned over.
    Makes 6 servings.
