Paralee'S Zucchini Bread - cooking recipe
Ingredients

3 egg yolks
1 c. Mazola oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 c. chopped nuts
3 beaten egg whites
Preparation

Beat the egg yolks.
Add the oil, sugar, zucchini and vanilla. Mix well, then add the flour, soda, baking powder, salt and cinnamon.
Stir in the nuts.
At last, fold in the beaten egg whites.
Spoon gently into 2 greased and floured loaf pans.
Bake at 325\u00b0 for 1 hour.
Cool slightly.
Turn out of pans; cool on a rack.
