Artichoke Nibbles - cooking recipe
Ingredients

2 (6 oz.) jars marinated artichoke hearts
1 small onion, finely diced
4 eggs
1/4 c. fine bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. Tabasco
1/2 lb. sharp Cheddar cheese (approximately 2 c.)
2 Tbsp. parsley, minced
Preparation

Drain marinade from 1 jar of artichoke hearts into a frying pan.
Add onion and saute until softened.
Drain liquid from other jar of artichoke hearts and discard.
Chop artichokes into small pieces.
In a bowl, beat eggs with fork.
Add crumbs, salt, pepper, oregano and Tabasco sauce.
Stir in cheese, parsley, artichokes and onion.
