Honey-Poached Apples - cooking recipe

Ingredients
    2 small apples
    2 tsp. lemon juice, divided
    3/4 c. water
    2-inch strip lemon peel
    2 tsp. honey
    1 tsp. vanilla extract
Preparation
    Core and pare apples.
    Cut into thin wedges and place in bowl with water to cover.
    Add 1 teaspoon lemon juice and set aside.
