Ingredients

1 (3 oz.) pkg. ladyfingers, split lengthwise
4 c. low-fat Ricotta cheese
1 (8 oz.) pkg. light cream cheese, softened
5 tsp. instant Espresso powder
2 tsp. vanilla extract
4 tsp. unsweetened cocoa powder
instant sweetened whipped cream
2 tsp. grated lemon zest
1 c. confectioners sugar
Preparation

Line bottom and sides of 9-inch spring-form pan with ladyfingers.
In large bowl, combine Ricotta cheese, cream cheese, sugar, Espresso powder, vanilla and 3 teaspoons cocoa powder. Beat at medium speed with electric mixer until well blended. Carefully spoon mix into prepared pan.
Refrigerate at least 3 hours or overnight.
