Summer Potato Salad(Serves 8) - cooking recipe

Ingredients
    approximately 2 lb. Idaho potatoes
    6 slices bacon
    1 small container sour cream
    1 tsp. Dijon-style mustard
    2 Tbsp. apple cider vinegar
    1/4 c. minced onion
    parsley
    salt
    pepper
Preparation
    Peel the potatoes and slice about 1/4 inch thick.
    Bring to a boil for 10 minutes in salted water.
    Drain.
