Banana Bran Muffins - cooking recipe
Ingredients

1 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 egg, beaten
3/4 c. low-fat milk
2 Tbsp. diet margarine
6 packets sugar substitute
1 1/2 c. bran cereal
1/2 c. mashed bananas
1 Tbsp. honey
Preparation

Preheat oven to 400\u00b0.
Spray 12 muffin pan cups with nonstick cooking spray.
Mix first 3 ingredients.
In separate bowl, blend egg, milk, margarine and sugar substitute.
Stir in bran cereal. Let stand for 5 minutes.
Mix mashed banana with honey until well mixed.
Add to bran mixture.
Stir in flour mixture just until well blended; do not overmix.
Fill muffin cups 2/3 full.
Bake for 18 to 20 minutes or until toothpick comes out clean.
Let stand for 2 to 3 minutes.
Remove to wire rack to cool.
