Southern Gizzards - cooking recipe

Ingredients
    fresh red gizzards (can be frozen)
    2 eggs
    2 c. flour
    2 c. pancake mix
    2 c. good oil
Preparation
    Heat oil in iron skillet on medium-high heat.
    Dip gizzards in whipped eggs and roll in flour or pancake mix.
    Put as many as you can get in the skillet.
    Turn every 5 minutes for about 20 minutes or dark brown.
