Zucchini Pancakes - cooking recipe

Ingredients
    2 medium zucchini
    1 large egg
    1/3 c. Bisquick
    1/4 tsp. salt
    2 Tbsp. Parmesan cheese
    butter
    1/2 c. grated Cheddar or Monterey cheese
Preparation
    Coarsely grate zucchini.
    There should be 2 cups, lightly packed down.
    Beat egg.
    Add zucchini, Bisquick, salt and cheese; mix well.
    In a large skillet, fry tablespoons of mixture in a little butter until lightly browned.
    Keep warm in oven while frying rest of batter.
