Vichysquash - cooking recipe

Ingredients
    1 medium onion
    2 Tbsp. butter
    3/4 c. chicken broth
    salt to taste
    6 medium summer squash (zucchini is wonderful)
    1 c. light cream or half and half
    chopped chives
Preparation
    Saute onion in butter until clear.
    Add broth and cut up squash; cook until tender.
    Puree squash when cool; season and add cream when cold.
    Sprinkle top with chives.
    Can be served hot or cold.
