Zucchini Muffins - cooking recipe

Ingredients
    3 eggs, beaten
    1 c. oil
    1 Tbsp. vanilla
    2 c. shredded, unpeeled zucchini (about 2 medium size)
    1 1/2 c. sugar
    2 c. unsifted all-purpose flour
    1 Tbsp. cinnamon
    1 1/2 tsp. soda
    1 1/4 tsp. salt
    1/4 tsp. baking powder
    1 c. chopped nuts
Preparation
    Combine eggs, oil, vanilla and zucchini. Add and stir until moistened sugar, flour, cinnamon, soda, salt, baking powder and chopped nuts. Grease muffin tins. Fill 2/3 full. Bake in preheated 400\u00b0 oven for 18 minutes.
