A Popular Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. vegetable oil
3 tsp. vanilla
1 tsp. salt
1/4 tsp. double acting baking powder
3 tsp. ground cinnamon
1 c. chopped filberts or walnuts
2 c. sugar
2 c. grated, peeled raw zucchini
3 c. all-purpose flour
1 tsp. baking soda
Preparation

Beat eggs until light and foamy.
Add sugar, oil, zucchini and vanilla to eggs and mix lightly but well.
Combine flour, salt, soda, baking powder and cinnamon, then add to the egg/zucchini mixture.
Stir all until well blended, then add nuts and pour into two 9 x 5 x 3-inch greased loaf pans.
Bake 1 hour in 350\u00b0 oven. Remove pans from oven and cool on a rack.
