Mexican Soup - cooking recipe

Ingredients
    1 lb. ground beef or chicken, cooked
    1 chopped onion, sauteed
    1 can corn
    1 to 2 cans pinto beans
    1 can Ro-Tel tomatoes
    1 to 2 cans stewed tomatoes
    1 lb. Velveeta cheese
Preparation
    Simmer all ingredients and then add cheese.
    Stir until completely mixed.
    Serve with tortilla chips and quesadillas.
