Fried Eggplant Or Summer Squash - cooking recipe
Ingredients

1 eggplant or 1 lb. summer squash
seasoned flour
butter or Crisco
Preparation

Wash eggplant; pare and cut in 1/2-inch slices.
Or wash squash and cut crosswise in slices.
Dip slices in well seasoned flour.
Saute slowly in butter for 10 to 15 minutes, or until crisp and browned, turning occasionally.
Serve hot.
Makes 6 servings.
