Brennan Potatoes - cooking recipe
Ingredients

2 large baking potatoes
4 strips bacon
1/4 c. chopped green onion
2 Tbsp. Parmesan cheese
1/2 c. sour cream
1/2 tsp. salt
1/2 tsp. pepper
Preparation

Bake potato.
Grill bacon until crisp.
Drain, leaving 3 tablespoons grease.
Add onion and saute slowly.
Remove from heat.
Cut shallow lengthwise strip from potatoes and scoop out inside and add to skillet.
Add cheese, crumbled bacon, sour cream and seasonings.
Mix and mash with spoon to blend.
Return to low heat and heat through.
Stuff into potatoes.
Drizzle with melted butter and sprinkle with paprika.
Bake at 350\u00b0 for 15 minutes.
