Swiss Potato Pancakes - cooking recipe

Ingredients
    4 c. shredded potatoes
    1/2 c. diced Swiss cheese
    1/2 tsp. salt
    3 oz. cream cheese
    1/8 tsp. pepper
    2 eggs
    dash of red pepper
    2 Tbsp. flour
    3 Tbsp. oleo
    3 Tbsp. salad oil
    2 Tbsp. grated onions
    4 c. unsifted flour, all-purpose
    1 Tbsp. sugar (can omit)
    2 tsp. salt
    1 3/4 c. vegetable shortening
    1 Tbsp. vinegar
    1 large egg
    1/2 c. water
Preparation
    Measure flour, sugar and salt into large bowl.
    Mix well with fork.
    Add shortening, mix with fork until crumbly.
    In small bowl beat together egg, water and vinegar (using fork to blend well). Combine dry ingredients with liquid.
    Divide dough into 5 equal portions and shape into round flattened patties, ready for rolling. Wrap each patty in plastic wrap, chill 1/2 hour before using.
    When ready to roll, lightly flour both sides of patty and roll out on lightly floured board.
    Makes 5 (9-inch) pie crusts or 20 tart shells.
    Can be frozen after shaping into round flattened patties.
