Applesauce Cake With Lemon Glaze - cooking recipe

Ingredients
    3 1/2 c. plain flour
    3 tsp. baking powder
    1/2 tsp. salt
    1 1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1 c. shortening
    1 1/2 c. sugar
    1 c. raisins
    1 c. confectioners sugar
    2 tsp. lemon juice
    1/2 tsp. grated lemon rind
Preparation
    Combine flour, baking powder, salt, cinnamon and nutmeg; set aside.
    Cream shortening with sugar.
    Add eggs and applesauce. Gradually stir in flour mixture.
    Beat at medium speed of electric mixer for 2 minutes.
    Fold in raisins.
    Spoon batter into a nonstick 12-cup fluted pan.
    Bake at 350\u00b0 for 55 to 60 minutes, or until wooden pick inserted into center of cake comes clean.
    Cool 10 minutes.
    Invert onto a wire rack for cooling. Drizzle sugar and lemon juice over cake.
    Makes 16 servings.
