Sweet Potato And Banana Casserole - cooking recipe

Ingredients
    6 large sweet potatoes, peeled
    4 bananas
    2 Tbsp. fresh lemon juice
    1/2 c. light brown sugar, packed
    1 tsp. ground nutmeg
    1/2 tsp. salt
    1/4 c. dark rum
    4 Tbsp. unsalted butter, melted
Preparation
    Preheat oven to 375\u00b0.
    Peel potatoes; cut crosswise into 1-inch slices.
    Place in pot; cover with water and bring to a boil.
    Reduce heat slightly; cook for 15 to 20 minutes, or until tender.
    Drain.
    Peel bananas; cut in half once lengthwise and cut twice crosswise.
    Toss with lemon juice.
    Place cooked potatoes and bananas in a shallow roasting pan.
    Sprinkle with brown sugar, nutmeg and salt.
    Drizzle with rum and melted butter.
    Cover and bake for 30 minutes.
    Remove from oven and puree potatoes, bananas and liquid in a food processor until fairly smooth, leaving a bit of texture.
    Pour into an ovenproof casserole and cover with aluminum foil.
    Bake in a 350\u00b0 oven for 15 to 20 minutes.
    Serves 10 to 12.
