Canjica(Corn Pudding) - cooking recipe
Ingredients

1 (1 lb.) pkg. white corn, dried
1/2 c. sugar
1 bottle coconut milk
2 c. milk
cinnamon
Preparation

Cook the corn as you would dried beans or peas until tender (20 minutes in the pressure cooker is one way).
Don't use a lot of water.
After the corn is done, add other ingredients.
(You may need more milk, coconut and sugar, depending on how the corn comes out.)
Before serving, sprinkle with cinnamon.
The texture should be creamy, but lumpy and not too thick.
Serve warm.
