Super Seafood Supper - cooking recipe
Ingredients

1 1/2 lb. cooked, cleaned shrimp
1/2 lb. sea legs
1/2 lb. scallops
2 c. thinly sliced celery
1 c. thinly sliced green pepper
1 c. thinly sliced onion
1/4 c. butter
1/4 c. coarsely chopped pimento
1 pt. sour cream
1 c. light cream
2 Tbsp. lemon juice
2 tsp. Worcestershire sauce
1/2 tsp. salt and dash of pepper
1 qt. cooked rice
2 (4 oz.) cans mushrooms
1/2 c. dry bread crumbs
2 Tbsp. melted butter
Preparation
-
Cook
celery,
green pepper and onion
in
butter
until partially cooked.
Combine these with seafood and pimento.\tMix sour cream, light cream, lemon juice and
seasonings
in
small bowl.
Combine 3/4 cup cream mixture, rice\tand
drained mushrooms.\t Spread rice mixture evenly in well greased 15\tx
9 x 2-inch
baking
dish.
Place seafood mixture on\ttop
of
rice mixture.
Pour remaining 1/4 cup of cream mixture over seafood. Combine
bread
crumbs
with remaining
butter.
Sprinkle
over casserole and bake 30 to 35 minutes at 350\u00b0.
May be prepared a day
ahead\tand
refrigerated.
Allow
30\tminutes
additional cooking time if refrigerated.
