Seafood Gumbo - cooking recipe
Ingredients

5 Tbsp. oil and flour
2 onions, chopped
1/2 bell pepper, chopped
1 1/2 c. celery, chopped
1 lb. frozen cut okra
2 to 3 cans crushed tomatoes
1 1/2 to 2 qt. water
2 lb. peeled, deveined shrimp
1 lb. crabmeat
1 can Campbell's consomme
season to taste (I use Nature's Seasoning)
Preparation

In a large pot over medium heat brown flour in oil until dark brown (not burned), stirring constantly.
Add onions, peppers and celery and saute until tender.
In a large bowl add tomatoes crushed up and water.
Season to taste.
Add to roux-vegetable mixture.
Add consomme and okra and bring to a boil.
Then reduce heat to simmer for 30 minutes.
Add shrimp; bring back to a boil for 2 to 3 minutes.
Reduce back to medium heat for 15 minutes. Then add crabmeat and simmer for 5 minutes, stirring gently.
Turn off burner and cover with lid.
Serve with rice.
