Harvest Bread - cooking recipe
Ingredients

3 c. sugar
3/4 c. shortening
4 eggs
2 c. mashed, cooked yams
1 (6 oz.) can frozen orange juice concentrate, thawed
3 1/2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. ground cloves
1 1/2 tsp. salt
1 c. chopped pecans
Preparation

Combine sugar, shortening and eggs in mixer bowl.
Beat until smooth.
Add yams and orange juice concentrate; mix well.
Mix flour, baking soda, cinnamon, nutmeg, allspice, cloves and salt together.
Add to batter, 1/3 at a time, mixing well after each addition.
Stir in pecans.
Spoon into 4 greased and floured coffee cans.
Bake at 350\u00b0 for 40 to 45 minutes or until loaves test done.
Remove to wire rack to cool.
