Zucchini Casserole - cooking recipe
Ingredients

6 c. sliced zucchini
1/4 c. chopped onion
1 can cream of mushroom soup
1 c. sour cream
1 c. shredded carrots
1 (8 oz.) pkg. herb stuffing mix, mixed with 1/2 c. melted butter and 1/2 c. shredded Cheddar cheese
Preparation

Steam zucchini, onion and carrots for 5 minutes.
Drain well. Combine soup and sour cream.
Stir in zucchini mixture.
Spread 1/2 of the stuffing mixture on bottom of greased casserole dish. Spoon in zucchini and top with remainder of stuffing.
Bake at 350\u00b0 for 45 minutes or until bubbly.
