Red Beans - cooking recipe

Ingredients
    2 c. red beans
    1/2 lb. salt pork
    2 onions, chopped
    1 Tbsp. shortening
    1 Tbsp. flour
Preparation
    Soak beans overnight. Brown salt pork in shortening. Brown onions. Add flour, browning to form a roux.
    Add beans and enough water to cover well. Simmer 2 hours.
    Serve with rice. Serves 8.
