Dad'S Chili - cooking recipe

Ingredients
    3 to 4 lb. ground chuck
    2 onions, chopped
    3 tsp. chili powder per lb. ground chuck
    1/2 tsp. cayenne (add more for hotter chili)
    1 small can tomato sauce
    2 (16 oz.) cans hot chili beans
    cracker meal
    salt and pepper to taste
Preparation
    Fry meat in skillet until done; drain well.
    Put meat, chili powder, cayenne, salt and pepper in large pot.
    Fill with water. Boil 3 to 4 hours, adding water when needed.
    Add onions.
    Cook until tender.
    Add tomato sauce; stir well.
    Spoon off grease that is floating on top.
    Add a little cracker meal for grease you cannot remove.
    This helps thicken chili.
    Add 2 more teaspoons chili powder.
    Add salt and pepper to taste.
    Add beans.
    The longer the meat and chili powder boil, the better the chili taste.
